Kombucha was new to Hawaiʻi when we began, and we had an unknown product — so instead of hard-selling, we went on a crusade of education. We talked story: what a living ferment is, why it fizzes, why we love it. One conversation and one taste at a time, we helped raise community awareness and create a market for this incredible living beverage. We are honored to be stewards of such a beneficial living brew.
Today that single bottle has grown into shelves at KTA, Foodland, Safeway, Whole Foods, Down to Earth, Island Naturals and even Costco — more than 190 stores, cafés and restaurants on five islands — and every batch is still fermented by hand at The Boochery, our 7,000-square-foot facility in Hilo. For the full experience, visit The Booch Bar in downtown Hilo: Booch and Jun on tap, growler fill-ups, kraut, kimchi, hot sauces and cold brew coffee, all under one roof.
